Cucumber Sushi Rolls


  • 1 cucumber 
  • 1 avocado (ripe)
  • 1 medium size carrot
  • 1 small onion
  • 2 tomatoes
  • 2 limes
  • 2 shallots
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of cayenne pepper
  • pinch of sea salt


Using a potato peeler/mandolin or knife, cut the cucumber into slices. Squeeze the two limes and add the juice to a bowl. Add avocado, scallions, olive oil, onion powder, cayenne pepper and sea salt into a food processor or blender (you can also mix by hand if you finely chop all ingredients). Once  processed add in lime juice to your desired taste. Chop your carrots, onion and tomatoes in long strips.

Take the cucumber strip and  add a spoonful of the avocado cream and spread across length wise. Add a few pieces of Carrots, onions and tomatoes to one end of the cucumber strip then roll.
